Super Simple Thai Chicken Curry Recipe by Claire G

Total Cost = £5.20


Ingredients:
3 Chicken Breasts
3 Onions 
220g Jar Yellow Thai Curry Paste (use red or green paste if you prefer)
400ml Tin of Coconut Milk 
450g Long Grain Rice

Method:
• Put rice on to cook as per packet instructions
• Cut chicken into cubes
• Fry in wok until cooked through
• Add sliced onion and cook until soft
• Stir in curry paste and then add coconut milk
• Leave to simmer for 5 minutes until everything is well combined
• Serve with rice 

N.B Using onions makes this super cheap and easy but it would work with any leftover veg.
